Meatballs Ingredient
- 300g lamb rib mince (fatty)
- 80g lamb low-fat minced meat
- broken rice – 1 1/2 cups
- chili pepper – 1 tablespoon
- ground chipotle – 1 tablespoon
- black pepper – 1 teaspoon
- ground cumin – 1 tablespoon
- parsley – 1/2 bunch
- flour all-purpose – 3 tablespoons (to cover the patties)
- rock salt – 3 teaspoons
for Soup
- split wheat – 1 cup (boiled)
- dry thyme – 1 tablespoon
- dried mint – 2 tablespoons
- water – 1.5 liters
- yogurt, 1.5 kg strained
for Smoked Butter
- red pepper paste – 1 tablespoon (optional)
- butter – 1 1/2 tablespoons
- chipotle – 1 teaspoon
- chili pepper ground – 1 teaspoon

In a large bowl, take the minced lamb, add chili, red pepper, red pepper, cumin. Pull out the broken rice for 1-1.5 minutes with the help of a rondo. You can add rice as well as mince, but if you grind, the powdered rice pieces will keep their form while the meatballs are being cooked and prevent it from dispersing. Knead the meatball mixture thoroughly. Roll up small grape-sized balls from the mortar you kneaded, dip them in flour in a bowl and set them aside on a tray where you lay oily paper.

Bake the meatballs in the oven that you have heated at 180 degrees until they are browned for 6-8 minutes. While the meatballs are cooking, melt the butter in a large pot, then add the dried thyme and dried mint. Add the whole yogurt and pre-boiled cracklings. Mix constantly. Add the water and boil on low heat, stirring constantly. Stirring is important so that your soup does not cut. When the meatballs are cooked, add the oil they left on the tray to your soup. Continue mixing. When your soup boils, mix it for 5 minutes and turn off the heat.
Service
If you wish, add pepper paste, isot and chili pepper and melt in a sauce pan. Take the soup in a bowl and pour this oil over it and serve. Bon Appetit.
