About Chebureki

Chebureki is a Tatar origin and one of Eskişehir’s (Turkey) famous flavors, although it is called “Raw Pastry”, it is actually fried in oil and completely cooked. In Tatars, “Che” means beautiful, delicious, and in some regions it is also known as “şır bureki”.

Chebureki; It is a traditional Crimean Tatar dish made by putting a mixture of minced meat, onion and spices in a rolled dough and frying in oil. … Under the influence of the 1860 Crimean War, immigrant Tatars were brought to Anatolia by migration. In Eskişehir Turkey, which took the most important part of this migration, it has become a part of the local cuisine.

Preparation of Chebureki Recipe

Start by kneading the dough for 8-10 minutes by adding flour, salt and water little by little in a large bowl. The dough should have the consistency of an earlobe. Since all-purpose flours absorb different amounts of water, it is important to add water gradually. You can add a little more or a little more water until the dough has consistency.

When the dough is no longer sticking to the hand at the end of the kneading process, cover it with a cloth and rest it on the edge for 20 minutes. Meanwhile, prepare the grout materials. Mix all the filling materials separately in one container.

Take meringues about the size of an egg (40-50g) from the dough you rested. Sprinkle the meringue with a little flour and roll it out to 23-25 ​​cm length.
