Ingredients
- 1 cup of red or yellow lentils boiled
- 1 onion medium
- 1 carrot medium
- 1 small potato
- salt and black pepper
- 1/2 teaspoon of cumin (optional)
- 1 liter of water
- 2 tablespoons unsalted butter
- parsley (for garnish)
for Red Pepper Dressing
- 2 tablespoons of unsalted butter
- 1 teaspoon of ground red pepper
for Whipped Cream
- 4 tablespoons of cream
- 1 tablespoon of milk
Lentil Soup Recipe Preparation
Chop the onion into small cubes. Peel the skins of potatoes and carrots and cut them into small cubes. Drain the lentil with a strainer and dust it.

Add a little olive oil and 1 spoon of butter in a deep saucepan and melt. Then add the onions and turn them pink for 2-3 minutes. Sprinkle flour over the onions and fry for 2 more minutes until it smells and turns slightly brown. Then add the cut potatoes and carrots. Add the lentils and finally add the water and boil over medium heat until the lentils are soft, for 35-40 minutes until the carrots and potatoes are cooked. After cooking, add salt and pepper and if you wish, add cumin and mix well.
After the soup is cooked, remove it from the stove and blend it with a hand blender. If you want an even more smooth consistency, you can also strain the drawn soup.
Presentation & Service
You can serve your lentil soup with melted butter or with whipped cream and parsley. For hot butter, you can fry butter, fry red pepper, pour 2 spoons on the soup and serve.
Alternatively, you can serve your soup with whipped cream. For cream, whisk the cream in a bowl with a mixer or with a whisk for 2-3 minutes if your hand is strong, add the concentrated cream to the hot soup and serve with parsley leaves.
