Kayseri Yağlaması Recipe: A Delicious Treat
Ingredients for the Kayseri Yağlaması Recipe
- 1 cup of warm water (200 ml)
- 1 cup of warm milk (200 ml)
- 1 packet of instant yeast
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 2 tablespoons of vegetable oil
- 5 cups of flour
For the filling:
- 500 g ground beef
- 2 medium onions
- 2 green bell peppers
- 2 red bell peppers
- 2 tomatoes
- 2 cloves of garlic
- 1 tablespoon of chili or tomato paste
- 2 tablespoons of butter
- 1 cup of olive oil
- 1 cup of water
- 1 teaspoon of salt
- 1 teaspoon of sweet paprika
- 1 teaspoon black pepper
- 1 teaspoon of cumin
For the topping;
- Garlic yogurt

Steps for Making Kayseri Yağlaması
Preparing the Dough
- Add the flour, yeast, salt, and sugar to the mixing bowl and stir.
- Add milk, water, and vegetable oil, then knead until you have a soft dough.
- Cover the dough with plastic wrap, then cover it with a clean cloth, and let it rise for 40 minutes.
Preparing the Ground Beef Filling
- Start browning the ground meat in a nonstick skillet.
- Once the ground meat has browned and released its juices, add the olive oil and butter, and sauté until the butter has melted.
- Add the chopped onion, garlic, and red and green bell peppers, then sauté.
- Add the tomato paste, black pepper, cumin, red pepper flakes, and salt, then stir.
- Add the peeled tomatoes and continue stirring.
- Finally, add the hot water and simmer over low heat for 8–10 minutes, until the ground meat has absorbed the liquid.
Shaping the Dough
- Transfer the risen dough to the work surface and gently press it inward from the edges to release the air.
- Divide the dough into 12 equal pieces and shape each piece into a ball.
- Cover the pastries with plastic wrap to prevent them from drying out.
Rolling Out and Baking the Dough
- Place each piece of dough on the floured work surface and roll it out to the size of a serving plate.
- Shake off any excess flour from the rolled-out dough.
- Place the dough in a preheated nonstick skillet and cook over medium heat, turning frequently.
Preparing the Grease
- Place the cooked lavash on a large plate.
- Spread a spoonful of the ground meat mixture over it.
- Layer the remaining lavash sheets with the ground meat mixture in the same way, continuing until the mixture is used up.
Served with Yogurt
- Optionally, whisk the garlic-flavored or plain yogurt and drizzle it over the toppings.
- Slice the pastries and serve them warm.
