Crepe Recipe: Easy Turkish Classic Pan Crepe



  • flour – 1 1/2 cups
  • sugar granulated – 1 teaspoon
  • eggs – 3 whole (at room temperature)
  • milk – 1 cup (at room temperature)
  • cream – 1 cup
  • butter – 1 tablespoon (melted)
  • water (extra for mixture consistency)
  • salt

Crepe Recipe Mix

In a bowl, first combine all the dry ingredients, flour, sugar and salt and mix them with your hands. Then, open a pool in the middle and add the eggs, milk and cream and whisk with a whisk or hand mixer for 2 minutes until there is no lump. Then add the melted butter into the mixture and mix. It should be a slightly more fluid slurry than boza. Let the crepe mixture rest for 15 minutes. If there is any lump in it, you can strain it before cooking.

We will not use any oil in the pan while making pancakes, because the butter and cream in it will prevent your pancakes from sticking, trust me. Take your pancakes pan to the stove and heat it well. Pour the pancakes mixture into the hot pan with a ladle at once and turn the pan until it is spread evenly. In the beginning, a few pancakes may not come out properly, with the right consistency and temperature, your pancakes will come out completely round. If the crepe consistency is dark, you can add water gradually and mix to lighten it.


You can serve the pancakes together with jam, marmalade, honey, agave syrup, caramel, peanut butter, chocolate sauce, ganache as well as raw dried fruits. Fresh seasonal fruits will be great with it.
