Shrimp Avocado Salad: A Delicious Mediterranean Breeze

  • shrimp – 1 kg fresh (striped tiger shrimp)
  • avocado – 2 pcs. (preferably black and ripe)
  • lime or lemon – 1 pcs.
  • cherry tomatoes – 6-8 pcs.
  • onion – 1 medium julien
  • village cucumber – 2-3 medium pcs.
  • parsley – 3-4 sprigs
  • extra virgin olive oil
  • butter – ½ tablespoon for shrimps
  • cayenne pepper – 1/4 teaspoon (for shrimps)
  • freshly ground black pepper
  • sea salt

Vinaigrette Dressing

  • 3 tablespoons of extra virgin olive oil
  • 6 tablespoons of fresh lemon juice
  • 2-3 sprigs of fresh coriander (optional)
  • 1 teaspoon flower honey
  • a pinch of sea salt

Shrimp Avocado Salad Recipe Preparation

Let’s start with weeding the shrimp. While holding the shrimp with one hand, grab the head with the other and twist it off. Gently separate the inner part of the feet with your thumbs and remove the crusts. Draw a thin cut (1mm deep) on the outside of the C-shaped shrimp with your knife and remove the long black part inside. After washing all the shrimp, put them in ice water.

Choose mature avocados. They are soft ones when you press them lightly with your finger while choosing the ripe avocado. Do not choose hard avocado, you cannot eat it. You are guaranteed to choose avocados that are black, preferably ready to eat. Use your knife to cut the avocado all the way up to its core. Turn out half of it, stick the knife lightly on the core and twist it out. Peel the avocados with your hands (peeling the soft vocado will be very easy). Slice each half avocado lengthwise into 3 pieces. Squeeze plenty of lemon juice on them in a bowl and set aside.

Slice the cherry tomatoes into 4. Cut the onion in half and then the julienne. Slice the cucumbers into half rings. For the vineigrette sauce, add lemon juice, olive oil, honey and chopped coriander with a pinch of salt and mix well.


Shrimp Avocado Salad Combine

Add a little olive oil and butter to a pan, add red pepper powder. Saute the shrimp for 2 minutes over high heat. Combine avocado, julienne onions, parsley tomato and coriander in a bowl and blend it by adding the vinaigrette sauce.

While serving it on a plate, pour some sauce on it, sprinkle red pepper and serve it warm. Enjoy!
