• 400 gr strained yogurt
  • 1.5 cups of wheat (boiled) or oatmeal
  • 250 gr boiled chickpeas
  • 250 gr boiled beans
  • 100 gr sweet corn (grain)

  • 1/2 cup extra virgin olive oil
  • isot, sumac, black seed
  • sea salt and freshly ground black pepper

Cold Ayran Soup Recipe

Before You Begin

You can add any other legumes and fresh spices you want into this very simple yet tasty and satisfying dish. Actually, we can compare it to Ashura. Yoghurt is the only binding in this dish, so we recommend choosing a good quality yoghurt with cream or strained yoghurt. You can dilute the recipe and drink it as a soup, or serve it as a very satisfying appetizer without adding water.


  • Soak wheat in water the day before,
  • Boil and cool all legumes separately,
  • Extract the skins of boiled chickpeas,
  • In a deep bowl, first add the yogurt and mix it with a whisk,
  • Add boiled chickpeas, wheat, beans and corn,
  • Remove the core parts of the Çengelköy cucumbers without peeling the shell parts,
  • Cut the cucumbers into small cubes and add to the mixture,
  • Add and mix isot, sumac and finely chopped fresh dill and black cumin seeds as much as you like,
  • Add sea salt and freshly ground black pepper, if you wish, add 1 crushed garlic and mix.
  • At this stage, you can serve as a satisfying appetizer without adding water,
  • If you wish, you can add cold water and serve in the consistency of ayran vaccine soup.
