- 1 cup of fine ground bulgur
- 2 cup of hot water
- 1 tablespoon of paprika paste
- 2 tablespoons tomato paste
- 20 cherry tomatoes
- 8 small size cucumbers, (do not use seeds)
- 1 bunch of parsley
- 1 bunch of fresh onions
- 1 teaspoon ground black pepper,
- 2 teaspoon sea salt
- 1 teaspoon ground curry (optional)
- 1 1/2 lemon, juice
- 1 teaspoon extra virgin olive oil, (fine quality)
Cut the tomatoes into 2 or 3 pieces in the middle, dont use the core parts of cucumbers, use only the outer parts. Cut the cucumbers diegonnal along and then cut into cubes. Thinly cut fresh onions. Chop the parsley.
In a large bowl add bulgur, mix all the dry seasonings and salt stir with your hands. Add paprika and tomato oaste into a cup and add hot water and mix well. Add the hot water mixture into bulgur. Add the remaining water. Mix the whole thing and cover it with a lid so that it brews. Relax for 10-15 minutes.
If the taste of the bulgur is soft, add all the other ingredients and mix well, add oil and lemon juice, add salt and ground pepper if necessary. Relax in the fridge for 1-2 hours to pass the flavors together.
You can either serve in bowl or as a snack in single-serving with seventy-five leaves, on top sprinkling onions and a piece of smoked paprika.
